Mushroom Porridge Recipe, Simple & Vegan

5 cups water
3/4 cup multi-grain rice
1 inch ginger, cut into strips
1 tablespoon garlic, minced
2 scallions, chopped
1 pint mushrooms, sliced
2-3 teaspoons tamari, to taste
1-2 teaspoons sesame oil
cilantro (optional)
sesame seeds (optional)
Directions
Rinse rice until water runs clear. Pressure cook water, rice, ginger and garlic for 30 minutes.
While the cooker is going, chop the, scallions & mushrooms.
When the 30 minutes is up, release the pressure to remove the lid (the rice mixture will be watery). Add the scallions, mushrooms & tamari. Cook for 10-15 minutes uncovered.
Serve into bowls. For each one, drizzle 1-2 teaspoons of sesame oil and garnish with fresh cilantro and sesame seeds.
