Ghee, Grass-Fed, Lactose-Free

Ghee is butter melted and strained of milk solids which contain lactose. After it’s cooled and solidified, it’s shelf stable, so it doesn’t have to be refrigerated and can be stored in a cabinet. This also means the ghee is spreadable without having to wait for it to soften at room temperature like with butter.
Ghee as a high smoke point (or flash point) of 482–485°F (250–252°C), which is much higher than butter's smoke point of 350°F (175°C).
This is important because heating ghee above its smoke point can be dangerous. The smoke can convert good fats into free radicals, which can harm cells, increase inflammation, and increase the risk of chronic diseases.
I tend to use avocado oil which has a smoke point of 520°F for high heat cooking, roasting and broiling; and use ghee when I want extra flavor.
